It opens at Hatzidakis Winery near Pyrgos Kallistis, 330 metres above sea level on the road to the Profitis Ilias monastery. The building is worth the stop on its own — like several Santorini cellars it was constructed downward into the slope rather than upward from it. Three wines are poured here.

The second stop is the wine museum at Mesa Gonia, cut into a cave, which covers what a winemaker's life on the island actually involved. The tour then moves to a viewpoint for wine at golden hour before finishing in Oia for the sunset itself.
